- Harvesting Cocoa
The manufacturing of chocolate begins with the harvesting of coca in a forest. Pods from this tree are only harvested until fully ripened for the production of chocolate. Unripened pods produce beans that are rich in cocoa butter and low in sugar.
- Fermenting the cocoa seeds
From the pods, the seeds are separated and pulp once harvested and allowed to start the fermentation process.
Raw cocoa beans have a flavor that is bitter and unpleasant. This bitterness is transformed by fermentation into the more complicated precursor of the classic taste of cocoa we are familiar with.
After drying and fermentation, all sticks and stones and other debris are thoroughly washed and removed. Usually, cacao beans are roast by using a dry roast process that is continuously agitated to ensure even heating.
The hull is removed and the internal nib extracted after roasting. Then the nibs are ground into a fine powder, containing cocoa and cocoa butter. Typically, the cocoa butter liquids the frictional heat during nib grinding. This liquefied form of spray cocoa nibs is called cocoa liquor. Then cacao liquor is poured into molds, cooled and then sold in those blocks and brought in. These blocks are defined as a baker or non-sweetened chocolate. Conversely, cocoa powder, and cocoa butter could be divided into two items.
Cocoa liquor, cocoa powder, chocolate baking, cacao butter and other ingredients can be mixed to make an unlimited number of cocoa items.
Cocoa liquor is mixed with extra cocoa butter for smoothness and mouth-feeling, sugar, milk and occasionally vanilla, emulators and stabilizing to make chocolate candies we are all familiar with.
A variable degree of milk or dark chocolate can be created by sugar and milk ratio. The particular balance between ingredients produces signature recipes that are often closely guarded by specialist brands.
